FOREST HONEY

Also known as honeydew. It is a high mountain honey, with a dark amber color and a sweet taste with slight bitter notes. It is obtained mainly from holm oak, oak and chestnut, and is harvested in the months of August and September.

It has antioxidant properties and a high content of mineral salts, especially iron. At the end of each summer, the bees transform the sugary solutions. This sugary solution is produced by the bite of insects such as the aphid on the oak acorn and the cork oak.
